Ingredients:

  • 8 oz graham crackers, crushed
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 tbsp fresh sage, chopped
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 cup caramel sauce

Instructions:

  1. Preheat oven to 350°F.
  2. In a bowl, combine the crushed graham crackers, brown sugar, melted butter, and fresh sage. Mix well and then press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and then set aside to cool.
  3. In a large mixing bowl, beat the cream cheese until smooth.
  4. Add in the granulated sugar and vanilla extract, and mix well until combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the heavy cream and mix until smooth and creamy.
  7. Pour the cheesecake filling over the cooled crust and smooth out the top.
  8. Bake in the preheated oven for 45-50 minutes, or until the edges are golden brown and the center is just set.
  9. Remove from the oven and allow to cool to room temperature before refrigerating for at least 2 hours, or overnight.
  10. Before serving, pour caramel sauce over the top of the cheesecake.
