Ingredients:

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 containers (16oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp. vanilla extract
  • 1/2 cup blueberry filling
  • 1/2 cup heavy cream
  • 4 oz. semisweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Mix Graham cracker crumbs, 1/4 cup sugar, and unsalted butter in a bowl. Press firmly onto bottom of a 9-inch springform pan.
  3. In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and 3/4 cup sugar until smooth. Beat in eggs one at a time, then add in vanilla extract.
  4. Pour the filling over crust. Spoon blueberry filling over the cheesecake and swirl using a knife.
  5. Bake for about 45-50 minutes or until the cheesecake is set but slightly jiggly.
  6. Remove from oven and cool to room temperature. Refrigerate until well chilled.
  7. In a small saucepan, heat heavy cream until just before boiling. Remove from heat and add in chocolate chips. Let it stand for a minute, then stir until smooth.
  8. Pour the chocolate ganache over the cheesecake and spread evenly. Refrigerate until ganache is set.
  9. Serve and enjoy!
