Acai Sweet Potato Cheesecake with Caramel Macchiato Topping

Ingredients:

  • 9 oz graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 2 cups mashed sweet potato
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/2 cup acai berry puree
  • 1/2 cup heavy cream
  • 1 tsp maple extract
  • 1/2 cup caramel sauce
  • Whipped cream and cinnamon for garnish

Instructions:

  1. Preheat oven to 325°F.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes and then let cool.
  4. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until creamy.
  5. Add mashed sweet potato, 1 cup sugar, eggs, vanilla, cinnamon, nutmeg and ginger. Beat until fully combined.
  6. Mix acai berry puree with heavy cream and maple extract. Add to the cheesecake batter and mix well.
  7. Pour the batter onto the prepared crust.
  8. Bake for 60-70 minutes, or until the center is almost set.
  9. Remove from the oven and let cool down to the room temperature before transfer to the refrigerator for at least 4 hours.
  10. To make the Caramel Macchiato topping, heat caramel sauce in a saucepan until it is warm.
  11. Top the cheesecake with the caramel sauce.
  12. Serve chilled with whipped cream and cinnamon on top.
