Acai Sweet Potato Cheesecake with Caramel Macchiato Topping
Ingredients:
- 9 oz graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
- 2 cups mashed sweet potato
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground ginger
- 1/2 cup acai berry puree
- 1/2 cup heavy cream
- 1 tsp maple extract
- 1/2 cup caramel sauce
- Whipped cream and cinnamon for garnish
Instructions:
- Preheat oven to 325°F.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and then let cool.
- In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until creamy.
- Add mashed sweet potato, 1 cup sugar, eggs, vanilla, cinnamon, nutmeg and ginger. Beat until fully combined.
- Mix acai berry puree with heavy cream and maple extract. Add to the cheesecake batter and mix well.
- Pour the batter onto the prepared crust.
- Bake for 60-70 minutes, or until the center is almost set.
- Remove from the oven and let cool down to the room temperature before transfer to the refrigerator for at least 4 hours.
- To make the Caramel Macchiato topping, heat caramel sauce in a saucepan until it is warm.
- Top the cheesecake with the caramel sauce.
- Serve chilled with whipped cream and cinnamon on top.
