Citrus Dream Cheesecake
Ingredients
- 2 cups crushed vanilla wafers
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 2 containers (16 oz) Norman's Kosher Cholov Yisroel Cream Cheese
- 1/2 cup granulated sugar
- 3 large eggs
- 1/2 cup macadamia nuts, chopped
Instructions
- Preheat the oven to 350°F.
- Combine the crushed vanilla wafers and olive oil in a bowl and mix well. Press the mixture evenly onto the bottom of a 9-inch springform pan.
- In a separate bowl, mix together the lemon juice, cream cheese, and sugar until well combined.
- Add the eggs one at a time, stirring well after each addition, until fully incorporated.
- Pour the mixture over the vanilla wafer crust in the springform pan.
- Bake for 35-40 minutes, or until the edges are set but the center of the cheesecake is still slightly jiggly.
- Remove the cheesecake from the oven and let it cool to room temperature before chilling in the refrigerator for at least 2 hours.
- When ready to serve, sprinkle the chopped macadamia nuts over the top of the cheesecake.
