Banana Nut Rocky Road Peanut Butter Cup Cheesecake

Ingredients:

  • 2 cups crushed banana nut cookies
  • 1/3 cup melted butter
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts
  • 1/2 cup mini chocolate chips
  • 1/2 cup peanut butter cups

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. Mix together the crushed banana nut cookies and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan and set aside.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until fluffy.
  5. Add in the sugar and beat again until combined.
  6. Add in the eggs one at a time, mixing well after each addition.
  7. Mix in the sour cream and vanilla extract until smooth.
  8. Fold in the marshmallows, walnuts, and chocolate chips until evenly distributed.
  9. Pour the cheesecake mixture over the cookie crust and smooth out the top with a spatula.
  10. Bake for 50-60 minutes or until the edges are lightly golden and the center is set.
  11. Allow the cheesecake to cool to room temperature before refrigerating for at least 3 hours or overnight.
  12. Before serving, top with chopped Norman's Kosher Cholov Yisroel Peanut Butter Cups.
