Banana Nut Rocky Road Peanut Butter Cup Cheesecake
Ingredients:
- 2 cups crushed banana nut cookies
- 1/3 cup melted butter
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup mini marshmallows
- 1/2 cup chopped walnuts
- 1/2 cup mini chocolate chips
- 1/2 cup peanut butter cups
Instructions:
- Preheat the oven to 325°F (160°C).
- Mix together the crushed banana nut cookies and melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan and set aside.
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until fluffy.
- Add in the sugar and beat again until combined.
- Add in the eggs one at a time, mixing well after each addition.
- Mix in the sour cream and vanilla extract until smooth.
- Fold in the marshmallows, walnuts, and chocolate chips until evenly distributed.
- Pour the cheesecake mixture over the cookie crust and smooth out the top with a spatula.
- Bake for 50-60 minutes or until the edges are lightly golden and the center is set.
- Allow the cheesecake to cool to room temperature before refrigerating for at least 3 hours or overnight.
- Before serving, top with chopped Norman's Kosher Cholov Yisroel Peanut Butter Cups.
