Cheesecake Heaven
Buttermilk Biscuit Base
6 oz buttermilk biscuits, crushed
3 tbsp unsalted butter, melted
Walnut Filling
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
1/2 cup walnuts, chopped
3 large eggs
Peach & Mango Topping
1 cup peaches, peeled and sliced
1 cup mangoes, peeled and sliced
1/4 cup granulated sugar
2 tsp cornstarch
1/2 cup water
Directions
Preheat oven to 350°F.
In a mixing bowl, mix the crushed biscuits and melted butter. Press into the bottom of a greased 9-inch springform pan.
Bake for 10 minutes then remove from oven to cool.
In a separate mixing bowl, beat the Norman's kosher cream cheese, sugar, and vanilla until light and fluffy. Beat in the eggs. Stir in the chopped walnuts.
Pour the cream cheese mixture onto the cooled crust and bake for 40-45 minutes or until set.
In a saucepan, combine the peaches, mangoes, sugar, cornstarch, and water over medium heat. Simmer until thickened.
Spoon the topping onto the cheesecake after it has cooled and chilled for at least 2 hours.
