Decadent Nutty Cheesecake
Ingredients:
1 cup almond flour
4 tablespoons unsalted butter, melted
1/4 cup granulated sugar
1 teaspoon vanilla extract
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1/2 cup granulated sugar
3 eggs
1/4 cup chocolate hazelnut spread
1/4 cup heavy cream
1/2 cup creamy peanut butter
1/4 cup powdered sugar
1/4 cup mini peanut butter cups, chopped
Instructions:
Preheat oven to 350°F (180°C).
In a mixing bowl, combine almond flour, melted butter, 1/4 cup of granulated sugar and vanilla extract. Mix until a crumbly dough forms. Press into the bottom of a 9-inch springform pan. Bake for 12 minutes, then set aside to cool.
In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and 1/2 cup of granulated sugar until smooth. Add in the eggs one at a time, mixing until fully incorporated between each addition. Stir in the chocolate hazelnut spread and heavy cream.
Pour the cheesecake filling over the cooled crust and smooth out the top. Bake for 35-40 minutes, or until the center is set. Let cool completely in the pan before refrigerating for at least 3 hours.
In a small mixing bowl, mix together the creamy peanut butter and powdered sugar until smooth. Spread over the cooled cheesecake and sprinkle chopped mini peanut butter cups on top.
