Ingredients:

  • 1 1/2 cups Apple pie crust mix
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup apple pie filling
  • 1/2 cup heavy cream
  • 1/2 cup semisweet chocolate chips

Instructions:

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, stir together the Apple pie crust mix, 1/4 cup sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from the oven and let cool.
  3. In a separate mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, 1 cup sugar, and vanilla extract until smooth. Add in the eggs one at a time, beating well after each addition.
  4. Stir in the apple pie filling, and pour the mixture on top of the crust.
  5. Bake the cheesecake for about 40 minutes, or until the center is almost set. Remove from the oven and let cool to room temperature.
  6. In a small saucepan, heat the heavy cream until it begins to simmer. Remove from the heat and stir in the chocolate chips until fully melted and combined.
  7. Pour the chocolate ganache over the top of the cooled cheesecake, spreading it evenly. Let the cheesecake chill in the refrigerator for at least 2 hours before serving.
