Passion Fruit Macadamia Cheesecake with Apple Pie Crust
Ingredients:
1 (9-inch) Apple Pie Crust
16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
1/2 cup granulated sugar
2 large eggs
1/4 cup passion fruit purée
1 tsp vanilla extract
1/2 cup macadamia nuts, finely chopped
2 tbsp unsalted butter, melted
1 tbsp all-purpose flour
Instructions:
Preheat the oven to 325°F.
In a bowl, mix together the chopped macadamia nuts, melted butter, and flour until fully combined. Press mixture onto bottom and up the sides of the prepared apple pie crust. Set aside.
In a large bowl, beat together the cream cheese and sugar until smooth and well combined.
Beat in the eggs, one at a time, until fully incorporated.
Mix in the passion fruit purée and vanilla extract until just combined.
Pour the filling over the prepared crust and smooth the top with a spatula.
Bake for 45-50 minutes, or until the edges are lightly golden and the center is slightly jiggly.
Remove from oven and let cool to room temperature. Refrigerate for at least 2 hours, or overnight.
Serve cold, topped with additional chopped macadamia nuts, if desired.
