Passion Fruit Macadamia Cheesecake with Apple Pie Crust

Ingredients:

  • 1 (9-inch) Apple Pie Crust
  • 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup passion fruit purée
  • 1 tsp vanilla extract
  • 1/2 cup macadamia nuts, finely chopped
  • 2 tbsp unsalted butter, melted
  • 1 tbsp all-purpose flour

Instructions:

  1. Preheat the oven to 325°F.
  2. In a bowl, mix together the chopped macadamia nuts, melted butter, and flour until fully combined. Press mixture onto bottom and up the sides of the prepared apple pie crust. Set aside.
  3. In a large bowl, beat together the cream cheese and sugar until smooth and well combined.
  4. Beat in the eggs, one at a time, until fully incorporated.
  5. Mix in the passion fruit purée and vanilla extract until just combined.
  6. Pour the filling over the prepared crust and smooth the top with a spatula.
  7. Bake for 45-50 minutes, or until the edges are lightly golden and the center is slightly jiggly.
  8. Remove from oven and let cool to room temperature. Refrigerate for at least 2 hours, or overnight.
  9. Serve cold, topped with additional chopped macadamia nuts, if desired.
