Acai Sweet Potato Cheesecake with Candied Pecans

Ingredients:

  • 1 ½ cups Acai Berry graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 1 ½ cups cooked and mashed sweet potato
  • 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese at room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • ¾ cup maple syrup
  • 1 tsp cinnamon
  • 1 cup chopped candied pecans

Instructions:

  1. Preheat the oven to 350°F and lightly grease a 9-inch springform pan.
  2. In a mixing bowl, combine the Acai Berry graham cracker crumbs and melted butter. Press the mixture onto the bottom of the prepared pan.
  3. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar and vanilla extract until smooth and creamy.
  4. Mix in the sweet potato, eggs, maple syrup, and cinnamon until well combined.
  5. Pour the mixture into the prepared crust.
  6. Place the pan in the oven and bake for 45-50 minutes or until the center is almost set.
  7. Remove from the oven and run a knife around the edges to loosen the cheesecake from the pan.
  8. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Once the cheesecake has chilled, sprinkle the candied pecans over the top.
  10. Slice and serve.
