Acai Sweet Potato Cheesecake with Candied Pecans
Ingredients:
- 1 ½ cups Acai Berry graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 1 ½ cups cooked and mashed sweet potato
- 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese at room temperature
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- ¾ cup maple syrup
- 1 tsp cinnamon
- 1 cup chopped candied pecans
Instructions:
- Preheat the oven to 350°F and lightly grease a 9-inch springform pan.
- In a mixing bowl, combine the Acai Berry graham cracker crumbs and melted butter. Press the mixture onto the bottom of the prepared pan.
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar and vanilla extract until smooth and creamy.
- Mix in the sweet potato, eggs, maple syrup, and cinnamon until well combined.
- Pour the mixture into the prepared crust.
- Place the pan in the oven and bake for 45-50 minutes or until the center is almost set.
- Remove from the oven and run a knife around the edges to loosen the cheesecake from the pan.
- Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Once the cheesecake has chilled, sprinkle the candied pecans over the top.
- Slice and serve.
