Ingredients

  • 1 1/2 cups apple pie crust crumbs
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp cinnamon
  • 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples
  • 1 tsp cinnamon
  • 1/4 cup water
  • 1 tbsp cornstarch
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup cherry pie filling

Instructions

  1. Preheat your oven to 325°F.
  2. Mix the apple pie crust crumbs, melted butter, and cinnamon together in a bowl. Press the mixture into the bottom of a greased 9-inch springform pan.
  3. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Pour the cheesecake filling into the prepared crust and smooth the top with a spatula.
  5. In another mixing bowl, stir together the diced apples, cinnamon, water, and cornstarch. Spread the apple mixture over the top of the cheesecake filling.
  6. Bake the cheesecake for about 1 hour or until the center is set. Remove from the oven and let cool completely.
  7. In a separate mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Spread the whipped cream over the top of the cooled cheesecake.
  8. Top with cherry pie filling and chill for several hours or overnight before serving.
