Creamy Pineapple & Kiwi Cheesecake
Ingredients:
- 2 cups Vanilla wafer crumbs
- 6 tbsp. unsalted butter, melted
- 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup sugar
- 2 tsp. vanilla extract
- 1/2 cup Greek yogurt
- 1/4 cup honey
- 1 can pineapple chunks, drained
- 2 kiwis, peeled and sliced
Directions:
- Preheat oven to 325°F.
- Mix vanilla wafer crumbs and melted butter together in a bowl.
- Press mixture onto the bottom of a greased 9-inch springform pan.
- Beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract together until smooth.
- Add Greek yogurt and honey, and mix until combined.
- Pour the mixture onto the wafer base in the springform pan and spread it evenly.
- Bake for 45 minutes or until set, then allow to cool on a wire rack.
- Add pineapple and kiwi topping before serving.
Topping:
- Arrange pineapple chunks and kiwi slices on top of the cheesecake
- Refrigerate until ready to serve.
