Oreo Base

  • 24 Oreo cookies, crushed into fine crumbs
  • 1/4 cup unsalted butter, melted

Salted Caramel Filling

  • 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened (24 oz in total)
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 cup homemade salted caramel sauce (or store-bought)

Hot Fudge Topping

  • 1/2 cup heavy cream
  • 1/2 cup semisweet chocolate chips
  • 2 tbsp unsalted butter
  • 1 tbsp light corn syrup
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan and set aside.
  2. In a mixing bowl, combine the Oreo crumbs and melted butter. Press the mixture evenly onto the bottom of the prepared pan.
  3. Bake the Oreo crust for 8-10 minutes. Remove from the oven and let it cool completely.
  4. Meanwhile, in a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese using an electric mixer until smooth.
  5. Add in the sugar, flour, eggs, sour cream, and vanilla extract, and beat the mixture until it is completely combined and smooth.
  6. Stir in the salted caramel sauce and pour the cheesecake batter into the prepared Oreo crust.
  7. Bake for 50-60 minutes or until the sides are set and the center jiggles slightly.
  8. Turn off the oven and crack the oven door open slightly. Allow the cheesecake to cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan.
  10. Refrigerate the cheesecake for at least 3 hours or overnight to fully set and chill.
  11. When ready to serve, prepare the hot fudge topping. In a small saucepan, heat the heavy cream until it begins to simmer.
  12. Add in the chocolate chips, unsalted butter, and corn syrup. Stir until everything is melted and smooth.
  13. Remove the hot fudge from heat, stir in the vanilla extract, and let it cool for a few minutes.
