Maple-Pecan, Whiskey and Chocolate Cheesecake Recipe
Ingredients:
Crust:
1 1/2 cups graham cracker crumbs
1/2 cup finely chopped pecans
4 tablespoons unsalted butter, melted
1/4 cup pure maple syrup
Filling:
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
1 cup granulated sugar
1/4 cup whiskey
4 large eggs, at room temperature
1 cup semisweet chocolate chips, melted
Topping:
1/2 cup heavy whipping cream
1/4 cup powdered sugar
1/4 cup finely chopped pecans
Instructions:
Preheat the oven to 350°F.
Make the crust: In a medium bowl, stir together the graham cracker crumbs, chopped pecans, melted butter, and maple syrup until thoroughly combined.
Press the mixture into the bottom of a 9-inch springform pan. Bake for 10-12 minutes or until lightly golden. Remove from oven and let cool while preparing filling.
Make the filling: In the bowl of a stand mixer fitted with the paddle attachment, beat the Norman's Kosher Cholov Yisroel Cream Cheese on medium speed until creamy and smooth, scraping down the sides of the bowl as needed.
Add the sugar and whiskey and beat until well combined. Add the eggs, one at a time, beating until just incorporated.
Stir in melted chocolate, mixing until just combined. Pour the filling over the cooled crust.
Bake for 50-60 minutes, or until the cheesecake is set and just starting to brown on the edges. The center should jiggle slightly when the pan is gently shaken.
Let the cheesecake cool in the pan on a wire rack for 10 minutes. Run a knife around the edge of the pan to loosen the cheesecake. Allow cheesecake to cool completely before refrigerating.
Make the topping: In a medium bowl, using an electric mixer, beat the heavy cream until stiff peaks form. Add in the powdered sugar and mix until combined.
Spread the whipped cream over the top of the cheesecake. Sprinkle with the remaining chopped pecans.
Cover the cheesecake and refrigerate for at least 6 hours or overnight.
To serve, remove the sides of the springform pan and slice the cheesecake into pieces.
