Ingredients

  • 8 oz Brie & Cranberry flavored crackers
  • 4 oz unsalted butter, melted
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1/2 cup Champagne
  • 1/2 cup raspberry puree
  • 2 tsp vanilla extract
  • 1/3 cup Lemon Curd

Instructions

  1. Preheat the oven to 325°F.
  2. Prepare a 9-inch springform pan with non-stick spray.
  3. Crush the Brie & Cranberry flavored crackers into small pieces in a food processor.
  4. Combine the cracker crumbs and melted butter in a bowl until well mixed. Press the mixture in the bottom of the springform pan in an even layer. Bake the crust for 10 minutes and let it cool before adding the filling.
  5. In a separate bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese on medium speed until smooth. Add in the sugar and mix until well-combined.
  6. Add the eggs, one at a time, mixing well after each addition. Stir in the Champagne, raspberry puree, and vanilla extract.
  7. Pour the mixture on top of the crust in the springform pan, smoothing the top with a spatula.
  8. Bake the cheesecake for 50-60 minutes or until the edges are lightly golden and the center is slightly jiggly.
  9. Turn off the oven and let the cheesecake cool in the oven for 30 minutes. Remove the cheesecake from the oven and let it cool completely before refrigerating for at least 2 hours or overnight.
  10. Before serving, spread the Lemon Curd over the top of the cheesecake.
