Date & Walnut Cheesecake with Peach & Mango Topping
Ingredients:
1 1/2 cups crushed dates
1 1/4 cups chopped walnuts
6 tbsp unsalted butter, melted
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup granulated sugar
4 large eggs
1 tsp vanilla extract
1/4 cup peach preserves
1/2 cup diced fresh mango
Directions:
Preheat oven to 350°F.
In a mixing bowl, combine the crushed dates, chopped walnuts, and melted butter. Press into a 9-inch springform pan to form the crust. Bake for 10 minutes and set aside to cool.
In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with the sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Pour the cheesecake mixture over the cooled crust and bake for 35-40 minutes or until the edges are lightly browned and the center is set.
Allow the cheesecake to cool to room temperature, then chill in the refrigerator for at least 2 hours.
For the topping, combine the peach preserves and diced fresh mango in a saucepan over low heat. Cook, stirring occasionally, until the mixture is heated through.
Serve the cheesecake with the warm peach and mango topping drizzled over the top.
