Date & Walnut Cheesecake with Peach & Mango Topping

Ingredients:

  • 1 1/2 cups crushed dates
  • 1 1/4 cups chopped walnuts
  • 6 tbsp unsalted butter, melted
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup peach preserves
  • 1/2 cup diced fresh mango

Directions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine the crushed dates, chopped walnuts, and melted butter. Press into a 9-inch springform pan to form the crust. Bake for 10 minutes and set aside to cool.
  3. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with the sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Pour the cheesecake mixture over the cooled crust and bake for 35-40 minutes or until the edges are lightly browned and the center is set.
  5. Allow the cheesecake to cool to room temperature, then chill in the refrigerator for at least 2 hours.
  6. For the topping, combine the peach preserves and diced fresh mango in a saucepan over low heat. Cook, stirring occasionally, until the mixture is heated through.
  7. Serve the cheesecake with the warm peach and mango topping drizzled over the top.
