Date & Walnut Cheesecake with Peach & Mango Topping
Ingredients:
- 1 cup chopped dates
- 1 cup chopped walnuts
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 3 eggs
- 1 can of sliced peaches, drained
- 1 mango, peeled and diced
- 1/4 cup peach preserves
Instructions:
- Preheat the oven to 350°F and grease a 9-inch springform pan.
- In a small mixing bowl, combine the dates, walnuts, flour, brown sugar, and butter until crumbly. Press into the bottom of the prepared pan.
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Gradually add in the granulated sugar and vanilla extract.
- Beat in the eggs one at a time, making sure to scrape down the sides of the bowl between each addition.
- Pour the mixture over the prepared crust and bake for 45-50 minutes, or until set.
- In a small saucepan, heat the peach preserves over low heat until melted.
- Arrange the sliced peaches and diced mango on top of the cheesecake and brush with the melted peach preserves.
- Cool completely before serving.
