Acai Greek Yogurt Cheesecake with Berries & Cream Topping
Ingredients:
8 oz Acai Berry Puree
1 cup graham cracker crumbs
4 tbsp melted butter
32 oz Norman's Kosher Cholov Yisroel Cream Cheese
1 cup Greek Yogurt
3/4 cup sugar
4 large eggs
1/4 cup honey
1 tsp vanilla extract
1 cup mixed berries
1/2 cup heavy cream
2 tbsp powdered sugar
Instructions:
Preheat the oven to 350°F.
Mix the graham cracker crumbs and melted butter together and press into the bottom of a 9-inch springform pan.
In a large bowl, beat the cream cheese until smooth. Add Greek yogurt and sugar, and beat until combined.
Add the eggs one at a time, beating well after each addition.
Stir in the honey and vanilla extract.
Pour the mixture over the graham cracker crust. Bake for 50-55 minutes or until the center is almost set.
Take out of the oven and cool completely. Cover and refrigerate for at least 4 hours before serving.
For the topping, beat the heavy cream and powdered sugar together until slightly thickened. Spread over the chilled cheesecake and top with mixed berries.
