Acai Greek Yogurt Cheesecake with Berries & Cream Topping

Ingredients:

  • 8 oz Acai Berry Puree
  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 32 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup Greek Yogurt
  • 3/4 cup sugar
  • 4 large eggs
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 cup mixed berries
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar

Instructions:

  1. Preheat the oven to 350°F.
  2. Mix the graham cracker crumbs and melted butter together and press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add Greek yogurt and sugar, and beat until combined.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the honey and vanilla extract.
  6. Pour the mixture over the graham cracker crust. Bake for 50-55 minutes or until the center is almost set.
  7. Take out of the oven and cool completely. Cover and refrigerate for at least 4 hours before serving.
  8. For the topping, beat the heavy cream and powdered sugar together until slightly thickened. Spread over the chilled cheesecake and top with mixed berries.
