Brie & Cranberry Cheesecake with Berries & Cream Topping

Ingredients:

  • 10 oz. Brie Cheese
  • 1 cup dried Cranberries
  • 1 cup Graham cracker crumbs
  • 2 containers (16 oz.) Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp. vanilla extract
  • 1 cup fresh mixed Berries
  • 1 cup heavy Cream

Instructions:

  1. Preheat oven to 325°F.
  2. Place Brie cheese in a saucepan and heat on low until melted.
  3. In a medium bowl, mix together melted Brie cheese, dried cranberries, and graham cracker crumbs to make the base.
  4. Press the base mixture into a 9-inch springform pan and bake for 10 minutes.
  5. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until creamy
  6. Add eggs one at a time, beating well after each addition
  7. Add vanilla extract and beat for another minute.
  8. Pour cheese mixture over the Brie & Cranberry base.
  9. Bake for 50-55 minutes until the cheesecake has set.
  10. Allow the cheesecake to cool for at least an hour before topping with fresh mixed Berries & Cream.
  11. To make the topping, whip the heavy cream in a chilled bowl until stiff peaks form.
  12. Spoon the whipped cream on top of the cheesecake and arrange mixed berries on top.
  13. Refrigerate for at least 2 hours before serving.
