Ingredients:

  • 2 cups Vanilla Wafer crumbs
  • 1/3 cup butter, melted
  • 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese (24oz total)
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 4 Peanut Butter Cups, chopped

Instructions:

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the vanilla wafer crumbs and melted butter. Mix well and press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add the peanut butter, sugar, and vanilla extract, and continue to beat until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the chopped Peanut Butter Cups and pour the mixture into the prepared crust.
  6. Bake for 50-55 minutes or until the center is almost set.
  7. Remove from the oven and let cool for 10 minutes.
  8. Run a knife around the edges of the pan to loosen the cheesecake and remove the sides of the pan completely.
  9. Refrigerate for at least 4 hours or overnight.
  10. Before serving, sprinkle additional chopped Peanut Butter Cups on top of the cheesecake.
