Cinnamon Roll Cheesecake with Bourbon Caramel Filling and Caramel Macchiato Topping
Cinnamon Roll Base
- 1 1/2 cups graham cracker crumbs
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/3 cup unsalted butter, melted
Bourbon Caramel Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/4 cup bourbon
- 3 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
- 1/2 cup caramel sauce
Caramel Macchiato Topping
- 1/2 cup heavy cream
- 1/2 cup caramel sauce
- 1 tablespoon instant coffee granules
Preheat oven to 325 degrees F. Wrap the outside of a 9-inch springform pan tightly with foil.
Cinnamon Roll Base Instructions:
- In a small bowl, combine the graham cracker crumbs, brown sugar, cinnamon, and melted butter.
- Press the mixture into the bottom of the prepared springform pan.
- Bake for 10 minutes, then remove from oven and set aside.
Bourbon Caramel Filling Instructions:
- In a large mixing bowl, beat the cream cheese and sugar at medium speed until creamy and smooth.
- Add the sour cream, bourbon, flour, and vanilla extract and beat until well combined.
- Add the eggs one at a time, beating well after each addition.
- Stir in 1/2 cup of caramel sauce.
- Pour the mixture over the cinnamon roll crust in the prepared pan.
- Bake for 1 hour or until the edges are lightly golden and the center is nearly set.
- Remove from oven and allow the cheesecake to cool completely at room temperature.
- Refrigerate the cheesecake for at least 4 hours or overnight.
Caramel Macchiato Topping:
- In a small saucepan, heat the heavy cream, caramel sauce, and instant coffee granules over low heat until the mixture is warm and combined.
- Remove from heat and let cool for 5-10 minutes.
- Pour the caramel macchiato topping over the chilled cheesecake and use a spatula to smooth it out.
- Refrigerate the cheesecake with topping until ready to serve.
