Chia Seeds Cheesecake with Berries & Cream
Ingredients:
- Chia Seeds Base:
- 1 cup Chia Seeds
- 1/2 cup Almonds, grounded
- 1/3 cup Coconut Oil, melted
- 1/4 cup Maple Syrup
- 1/2 tsp Vanilla Extract
- Cream Cheese Filling:
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- Berries & Cream Topping:
- 1 cup Heavy Cream
- 1/4 cup Powdered Sugar
- 1/2 tsp Vanilla Extract
- 1 cup Mixed Berries (strawberries, blueberries, raspberries)
Instructions:
- Preheat the oven to 350°F.
- Combine all Chia Seeds Base ingredients in a food processor and blend until it forms a crumbly dough.
- Press the mixture into the bottom of a 9-inch springform pan, spreading it out evenly. Bake the crust for 10 minutes and set aside to cool.
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar on medium speed until creamy.
- Add the eggs and vanilla extract, and mix until thoroughly combined.
- Pour the filling over the cooled Chia Seeds base. Spread it out evenly and bake for 30-35 minutes or until the filling is set completely.
- Once done, let the cheesecake cool to room temperature before refrigerating it for at least 4 hours or overnight.
- For the Berries & Cream Topping, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Top the cheesecake with the whipped cream mixture and mixed berries. Slice and serve cold.
