Chia Seeds Cheesecake with Berries & Cream

Ingredients:

  • Chia Seeds Base:
  • 1 cup Chia Seeds
  • 1/2 cup Almonds, grounded
  • 1/3 cup Coconut Oil, melted
  • 1/4 cup Maple Syrup
  • 1/2 tsp Vanilla Extract
  • Cream Cheese Filling:
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • Berries & Cream Topping:
  • 1 cup Heavy Cream
  • 1/4 cup Powdered Sugar
  • 1/2 tsp Vanilla Extract
  • 1 cup Mixed Berries (strawberries, blueberries, raspberries)

Instructions:

  1. Preheat the oven to 350°F.
  2. Combine all Chia Seeds Base ingredients in a food processor and blend until it forms a crumbly dough.
  3. Press the mixture into the bottom of a 9-inch springform pan, spreading it out evenly. Bake the crust for 10 minutes and set aside to cool.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar on medium speed until creamy.
  5. Add the eggs and vanilla extract, and mix until thoroughly combined.
  6. Pour the filling over the cooled Chia Seeds base. Spread it out evenly and bake for 30-35 minutes or until the filling is set completely.
  7. Once done, let the cheesecake cool to room temperature before refrigerating it for at least 4 hours or overnight.
  8. For the Berries & Cream Topping, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Top the cheesecake with the whipped cream mixture and mixed berries. Slice and serve cold.
