Cinnamon Roll Cheesecake with Granola & Maple Filling and Peach & Mango Topping

Ingredients:

  • 1 package of cinnamon roll dough
  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/2 cup granola
  • 1/2 cup diced peaches
  • 1/2 cup diced mangoes

Instructions:

  1. Preheat the oven to 350°F and grease a 9-inch springform pan.
  2. Roll out the cinnamon roll dough and press it onto the bottom of the prepared pan.
  3. In a mixing bowl, beat 8 oz Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add in sugar, eggs, and vanilla extract, and mix until fully combined.
  4. Stir in the maple syrup and granola into the cream cheese mixture.
  5. Pour the mixture over the cinnamon roll dough in the prepared pan and bake for 30-35 minutes or until the cheesecake is set.
  6. Let the cheesecake cool to room temperature, then chill in the refrigerator for at least 2 hours.
  7. Top the cheesecake with the diced peaches and mangoes before serving.
