Creamy Vanilla Berry Cheesecake
Ingredients
28 vanilla wafer cookies, crushed
1/4 cup unsalted butter, melted
3 containers of Norman's Kosher Cholov Yisroel Cream Cheese (8 oz each), at room temperature
1 cup granulated sugar
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
4 large eggs, at room temperature
1 cup fresh mixed berries
1/2 cup heavy whipping cream
1 tablespoon powdered sugar
Instructions
Preheat oven to 350°F.
In a bowl, mix together the crushed vanilla wafers and melted butter. Press onto the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool to room temperature.
In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with an electric mixer until smooth.
Add the sugar, flour, and vanilla extract to the mixing bowl and beat until fluffy.
One at a time, add the eggs to the mixing bowl and beat at a low speed until just blended.
Pour the mixture over the cooled crust and bake for 45-50 minutes until the center of the cheesecake is almost set.
Turn off the oven and leave the cheesecake inside for another 10-15 minutes before removing it from the oven. Run a knife around the edges of the cheesecake to loosen it from the pan.
Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
Before serving, beat the heavy cream and powdered sugar with an electric mixer until stiff peaks form. Spread the whipped cream over the top of the cheesecake and decorate with fresh mixed berries.
