Quinoa Cheesecake with Strawberry Filling and Peach & Mango Topping
Ingredients:
- 1 cup cooked quinoa
- 4 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 2 eggs, beaten
- 1 cup fresh strawberries, mashed
- 1/4 cup sugar
- 1 tbsp cornstarch
- 1 cup diced peaches
- 1 cup diced mangoes
- 1/2 cup water
- 1/2 cup sugar
- 1 tbsp cornstarch
Directions:
- Preheat oven to 350°F.
- In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add 1/2 cup sugar and beat until light and fluffy.
- Add vanilla extract and beaten eggs, and beat until well combined.
- Mix in cooked quinoa and spread mixture into a 9-inch pie dish.
- Bake for 25 minutes, or until center is set.
- In a saucepan, mix mashed strawberries, 1/4 cup sugar, and 1 tbsp cornstarch.
- Cook over medium heat until mixture thickens, stirring constantly. Set aside.
- In another saucepan, mix diced peaches, diced mangoes, water, 1/2 cup sugar, and 1 tbsp cornstarch.
- Cook over medium heat until mixture thickens, stirring constantly. Set aside.
- Spread the cooled strawberry mixture on top of the quinoa cheesecake.
- Spread the peach and mango mixture on top of the strawberry layer.
- Chill in the refrigerator for at least 2 hours before serving.
