Date & Walnut Cheesecake with Hibiscus Filling and Balsamic Glaze
Ingredients:
1 cup finely chopped walnuts
1 cup pitted dates, finely chopped
1/2 cup melted butter
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup granulated sugar
1/4 cup hibiscus powder
4 large eggs
1/2 cup balsamic vinegar
1/4 cup honey
Instructions:
Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and set aside.
In a medium bowl, mix together the chopped walnuts, chopped dates, and melted butter until fully combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes and then let cool.
Reduce the oven temperature to 325°F (160°C).
Using an electric mixer, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth and creamy.
Add hibiscus powder to the cream cheese mixture and beat until combined.
Add the eggs, one at a time, and continue to beat until fully incorporated.
Pour the mixture over the cooled crust and bake for about 50-55 minutes or until the center is almost set. Allow the cheesecake to cool to room temperature before chilling in the fridge for at least 4 hours, or overnight.
In a small saucepan, whisk together balsamic vinegar and honey. Bring the mixture to a simmer over medium heat and let cook until the mixture reduces and thickens, about 10 minutes. Let cool to room temperature before drizzling over the cheesecake.
