Caramel Berries Cheesecake

Ingredients

  • 1 1/2 cups vanilla wafer crumbs
  • 1/4 cup unsalted butter, melted
  • 12 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup salted caramel sauce
  • 1 cup mixed berries for topping
  • 1/2 cup heavy cream for topping

Instructions

  1. Preheat the oven to 325°F. Wrap the outside of a 9-inch springform pan with aluminum foil, and set aside.
  2. In a bowl, mix together vanilla wafer crumbs and melted butter. Press into the bottom of the prepared pan.
  3. In a stand mixer, beat Norman's Kosher Cholov Yisroel Cream Cheese with granulated sugar until creamy. Add eggs one at a time, mixing until just combined.
  4. Add 1/4 cup heavy cream and salted caramel, and mix until fully incorporated.
  5. Pour the mixture over the crust, and smooth the top with a spatula.
  6. Bake for 45-50 minutes, until the edges are set but the center is still slightly jiggly.
  7. Remove from the oven, and let cool to room temperature. Chill in the refrigerator for at least 3 hours, or overnight.
  8. Before serving, beat 1/2 cup heavy cream in a stand mixer, until stiff peaks form. Spread over the top of the chilled cheesecake.
  9. Add mixed berries on top of the whipped cream to decorate.
