Caramel Berries Cheesecake
Ingredients
1 1/2 cups vanilla wafer crumbs
1/4 cup unsalted butter, melted
12 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
1/2 cup granulated sugar
3 large eggs
1/4 cup heavy cream
1/4 cup salted caramel sauce
1 cup mixed berries for topping
1/2 cup heavy cream for topping
Instructions
Preheat the oven to 325°F. Wrap the outside of a 9-inch springform pan with aluminum foil, and set aside.
In a bowl, mix together vanilla wafer crumbs and melted butter. Press into the bottom of the prepared pan.
In a stand mixer, beat Norman's Kosher Cholov Yisroel Cream Cheese with granulated sugar until creamy. Add eggs one at a time, mixing until just combined.
Add 1/4 cup heavy cream and salted caramel, and mix until fully incorporated.
Pour the mixture over the crust, and smooth the top with a spatula.
Bake for 45-50 minutes, until the edges are set but the center is still slightly jiggly.
Remove from the oven, and let cool to room temperature. Chill in the refrigerator for at least 3 hours, or overnight.
Before serving, beat 1/2 cup heavy cream in a stand mixer, until stiff peaks form. Spread over the top of the chilled cheesecake.
Add mixed berries on top of the whipped cream to decorate.
