Caffeine & Coconut Cheesecake
Ingredients:
- 1 1/2 cups Hemp Hearts
- 3/4 cup Coconut Oil, melted
- 1/4 cup Maple Syrup
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
- 1/2 cup Coconut Milk
- 1/3 cup Chia Seeds
- 1/2 cup Brown Sugar
- 4 Eggs
- 1/4 cup Kahlua
- 1/4 cup Espresso, cooled
Directions:
- Preheat oven to 350°F. Grease a 9-inch springform pan and set aside.
- In a food processor, pulse Hemp Hearts, melted Coconut Oil, and Maple Syrup together until well combined.
- Press the mixture into the bottom of the prepared pan and bake for 10 minutes. Let it cool completely.
- In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, Coconut Milk, Chia Seeds, and Brown Sugar until smooth.
- Add the eggs, one at a time, and mix until just combined.
- Pour the filling over the cooled Hemp Hearts crust.
- Bake for 40-45 minutes or until the center is set.
- Let it cool to room temperature before refrigerating overnight.
- Before serving, mix Kahlua and cooled Espresso together and pour over the top of the cheesecake.
