Caffeine & Coconut Cheesecake

Ingredients:

  • 1 1/2 cups Hemp Hearts
  • 3/4 cup Coconut Oil, melted
  • 1/4 cup Maple Syrup
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 1/2 cup Coconut Milk
  • 1/3 cup Chia Seeds
  • 1/2 cup Brown Sugar
  • 4 Eggs
  • 1/4 cup Kahlua
  • 1/4 cup Espresso, cooled

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan and set aside.
  2. In a food processor, pulse Hemp Hearts, melted Coconut Oil, and Maple Syrup together until well combined.
  3. Press the mixture into the bottom of the prepared pan and bake for 10 minutes. Let it cool completely.
  4. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, Coconut Milk, Chia Seeds, and Brown Sugar until smooth.
  5. Add the eggs, one at a time, and mix until just combined.
  6. Pour the filling over the cooled Hemp Hearts crust.
  7. Bake for 40-45 minutes or until the center is set.
  8. Let it cool to room temperature before refrigerating overnight.
  9. Before serving, mix Kahlua and cooled Espresso together and pour over the top of the cheesecake.
