Mango Bliss Cheesecake Recipe

Ingredients

  • Graham cracker crumbs - 2 cups
  • Sugar - 1/4 cup
  • Butter, melted - 1/2 cup
  • Norman's Kosher Cholov Yisroel Cream Cheese, softened - 16 oz (2 containers)
  • Sugar - 1 cup
  • Eggs - 3
  • Mango puree - 1 cup
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Water - 1/4 cup
  • Caramel sauce - 1/2 cup

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes.
  4. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until creamy.
  5. Add the eggs, one at a time, and beat well after each addition.
  6. Stir in the mango puree and vanilla extract until well combined.
  7. In a small bowl, dissolve the cornstarch in water. Stir it into the mango mixture.
  8. Pour the mixture over the crust and bake for 45-50 minutes or until the cheesecake is set but still slightly jiggly in the center.
  9. Remove from the oven and let it cool to room temperature.
  10. Chill the cheesecake in the refrigerator for at least 2 hours or overnight.
  11. Drizzle the caramel sauce over the top of the cheesecake before serving.
