Mango Bliss Cheesecake Recipe
Ingredients
- Graham cracker crumbs - 2 cups
- Sugar - 1/4 cup
- Butter, melted - 1/2 cup
- Norman's Kosher Cholov Yisroel Cream Cheese, softened - 16 oz (2 containers)
- Sugar - 1 cup
- Eggs - 3
- Mango puree - 1 cup
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Water - 1/4 cup
- Caramel sauce - 1/2 cup
Instructions
- Preheat the oven to 325°F.
- In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes.
- In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until creamy.
- Add the eggs, one at a time, and beat well after each addition.
- Stir in the mango puree and vanilla extract until well combined.
- In a small bowl, dissolve the cornstarch in water. Stir it into the mango mixture.
- Pour the mixture over the crust and bake for 45-50 minutes or until the cheesecake is set but still slightly jiggly in the center.
- Remove from the oven and let it cool to room temperature.
- Chill the cheesecake in the refrigerator for at least 2 hours or overnight.
- Drizzle the caramel sauce over the top of the cheesecake before serving.
