Citrus Dream Cheesecake Recipe
Ingredients:
- 1 1/2 cups of vanilla wafer crumbs
- 1/4 cup of sugar
- 1/2 cup of unsalted butter, melted
- 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese, 8oz each, softened
- 1 cup of sugar
- 3 eggs
- 1/4 cup of all-purpose flour
- 1/3 cup of olive oil
- 1/4 cup of lemon juice
- 1/4 cup of pineapple juice
- 1 tsp of vanilla extract
- 1 cup of chopped pineapple
- 1 cup of sliced kiwi
Instructions:
- Preheat oven to 350°F.
- Mix vanilla wafer crumbs with sugar and melted butter until well combined. Press the mixture onto the bottom of a 9-inch springform pan.
- In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Gradually add sugar and beat until fluffy. Add eggs one at a time, beating well after each addition.
- Stir in flour, olive oil, lemon juice, pineapple juice, and vanilla extract until well combined.
- Pour filling into crust and bake for 45-50 minutes or until center is almost set.
- Allow the cheesecake to cool in the pan for 1 hour. Then run a knife around the edges to loosen it from the pan. Cover and refrigerate overnight.
- Before serving, top the cheesecake with chopped pineapple and sliced kiwi.
