Cheesecake Delight

Almond Flour Crust Ingredients:

  • 1 3/4 cup almond flour
  • 1/4 cup melted butter
  • 2 tablespoons granulated sugar

Peanut Butter Cup Filling Ingredients:

  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 3/4 cup creamy peanut butter
  • 1 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips, melted

Fudge Brownie Topping Ingredients:

  • 1/2 cup butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 eggs
  • 1/4 cup all-purpose flour

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Prepare the crust. Mix almond flour, melted butter and sugar in a medium bowl until well combined. Press mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes. Cool completely on a wire rack.
  3. Prepare the filling. Beat Norman's Kosher Cholov Yisroel Cream Cheese, peanut butter and sugar in a large bowl until creamy. Add eggs and vanilla extract; beat until well combined. Stir in melted chocolate chips. Spread mixture evenly over the crust.
  4. Prepare the topping. Mix melted butter, sugar and cocoa powder in a medium bowl. Add eggs and flour; beat until well combined. Pour batter over the filling.
  5. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. Refrigerate for at least 4 hours before serving.
