Spicy Pistachio Cheesecake with Salted Caramel and Tropical Fruits
Ingredients:
- For the Crust:
- 1 1/2 cups of ground pistachios
- 1/4 teaspoon of ground wasabi
- 1/4 cup of melted butter
- For the Filling:
- 3 containers (24 ounces) of Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup of white sugar
- 1 teaspoon of vanilla extract
- 3 eggs
- 1/4 cup of heavy cream
- 1/2 cup of salted caramel sauce
- For the Topping:
- 1 ripe pineapple
- 2 kiwis
- 1 tablespoon of honey
Instructions:
- Preheat the oven to 350°F (175°C).
- Mix the ground pistachios and wasabi in a bowl, then add melted butter and stir until combined.
- Press the pistachio mixture onto the bottom of a 9-inch springform pan and bake for 10 minutes.
- For the filling, beat the cream cheese, sugar, and vanilla extract until smooth.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the heavy cream and salted caramel sauce.
- Pour the filling onto the crust and bake for 45 to 50 minutes or until set.
- Cool the cheesecake to room temperature and refrigerate for at least 2 hours.
- Before serving, cut the pineapple into small pieces and slice the kiwis.
- Arrange the fruits on top of the cheesecake and coat with honey.
