Spicy Pistachio Cheesecake with Salted Caramel and Tropical Fruits

Ingredients:

  • For the Crust:
  • 1 1/2 cups of ground pistachios
  • 1/4 teaspoon of ground wasabi
  • 1/4 cup of melted butter
  • For the Filling:
  • 3 containers (24 ounces) of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup of white sugar
  • 1 teaspoon of vanilla extract
  • 3 eggs
  • 1/4 cup of heavy cream
  • 1/2 cup of salted caramel sauce
  • For the Topping:
  • 1 ripe pineapple
  • 2 kiwis
  • 1 tablespoon of honey

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Mix the ground pistachios and wasabi in a bowl, then add melted butter and stir until combined.
  3. Press the pistachio mixture onto the bottom of a 9-inch springform pan and bake for 10 minutes.
  4. For the filling, beat the cream cheese, sugar, and vanilla extract until smooth.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Stir in the heavy cream and salted caramel sauce.
  7. Pour the filling onto the crust and bake for 45 to 50 minutes or until set.
  8. Cool the cheesecake to room temperature and refrigerate for at least 2 hours.
  9. Before serving, cut the pineapple into small pieces and slice the kiwis.
  10. Arrange the fruits on top of the cheesecake and coat with honey.
