Cheesecake with Quinoa Base, Granola & Maple Filling, and Peach & Mango Topping
Ingredients
- 1 cup cooked quinoa
- 1 cup granola
- 4 tablespoons melted margarine
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup maple syrup
- 3 eggs
- 1 teaspoon vanilla extract
- 1/2 cup peach preserves
- 1/2 cup mango puree
Instructions
- Preheat the oven to 325°F (160°C).
- Mix the cooked quinoa, granola, and melted margarine in a bowl.
- Press the mixture onto the bottom of a greased 9-inch springform pan.
- Bake for 8 minutes and then let cool.
- In a mixing bowl, beat the cream cheese until smooth.
- Add the maple syrup, eggs, and vanilla extract, and beat until well combined.
- Pour the mixture onto the cooled crust.
- Bake for 40 minutes or until set.
- Remove from the oven and let cool for 30 minutes.
- In a small saucepan, mix together the peach preserves and mango puree.
- Heat the mixture over medium heat for 3-4 minutes, stirring constantly.
- Remove from the heat and let cool.
- Spoon the peach-mango topping over the cheesecake.
- Chill the cheesecake in the refrigerator for at least 2 hours before serving.
