Strawberry Almond Cheesecake with Chocolate Ganache
Ingredients:
- 1 1/2 cups almond flour
- 4 tablespoons melted unsalted butter
- 1/2 cup granulated sugar
- 3 containers of 8oz Norman's Kosher Cholov Yisroel Cream Cheese
- 3/4 cup sour cream
- 3 eggs
- 1 tablespoon vanilla extract
- 1/2 teaspoon kosher salt
- 1 1/2 cups diced fresh strawberries
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat the oven to 350°F. Grease a 9-inch springform pan.
- In a bowl, combine almond flour, melted butter, and 1/4 cup granulated sugar until crumbly. Press mixture into bottom of prepared pan. Set aside.
- In another bowl, beat the cream cheese, remaining 1/4 cup granulated sugar, and sour cream until well combined. Beat in eggs one at a time. Stir in the vanilla extract and kosher salt.
- Gently fold in the diced strawberries and spread mixture evenly over crust.
- Bake the cheesecake for 45-50 minutes or until set in the center. Cool on a wire rack for 10 minutes.
- In a small saucepan, heat heavy cream over medium heat until it just begins to simmer. Remove from heat and add chocolate chips. Whisk until smooth.
- Pour chocolate ganache over cooled cheesecake. Spread it evenly over the top. Refrigerate for at least 4 hours or overnight.
