Strawberry Almond Cheesecake with Chocolate Ganache

Ingredients:

  • 1 1/2 cups almond flour
  • 4 tablespoons melted unsalted butter
  • 1/2 cup granulated sugar
  • 3 containers of 8oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 3/4 cup sour cream
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups diced fresh strawberries
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan.
  2. In a bowl, combine almond flour, melted butter, and 1/4 cup granulated sugar until crumbly. Press mixture into bottom of prepared pan. Set aside.
  3. In another bowl, beat the cream cheese, remaining 1/4 cup granulated sugar, and sour cream until well combined. Beat in eggs one at a time. Stir in the vanilla extract and kosher salt.
  4. Gently fold in the diced strawberries and spread mixture evenly over crust.
  5. Bake the cheesecake for 45-50 minutes or until set in the center. Cool on a wire rack for 10 minutes.
  6. In a small saucepan, heat heavy cream over medium heat until it just begins to simmer. Remove from heat and add chocolate chips. Whisk until smooth.
  7. Pour chocolate ganache over cooled cheesecake. Spread it evenly over the top. Refrigerate for at least 4 hours or overnight.
