Brie & Berries Cheesecake

Ingredients

  • 8 oz of Brie Cheese, at room temperature
  • 1 cup of Cranberries
  • 1 1/2 cups of Granola
  • 1/4 cup of Maple Syrup
  • 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup of Sugar
  • 4 Eggs
  • 1 tsp of Vanilla Extract
  • Fresh Berries for topping
  • Whipped Cream for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse together the cranberries and Brie cheese until smooth.
  3. Add the granola and maple syrup to the food processor and pulse until combined.
  4. Press the mixture into the bottom of a greased 9-inch springform pan.
  5. In a large bowl, beat together 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
  6. Add in the eggs one at a time, beating on low speed until just combined.
  7. Mix in the vanilla extract.
  8. Pour the cheesecake filling over the crust.
  9. Bake for 40-45 minutes, or until the edges are set but the center still has a slight jiggle to it.
  10. Remove from the oven and allow to cool to room temperature.
  11. Refrigerate for at least 2 hours before serving.
  12. Top with fresh berries and whipped cream before serving.
