Brie & Berries Cheesecake
Ingredients
- 8 oz of Brie Cheese, at room temperature
- 1 cup of Cranberries
- 1 1/2 cups of Granola
- 1/4 cup of Maple Syrup
- 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup of Sugar
- 4 Eggs
- 1 tsp of Vanilla Extract
- Fresh Berries for topping
- Whipped Cream for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse together the cranberries and Brie cheese until smooth.
- Add the granola and maple syrup to the food processor and pulse until combined.
- Press the mixture into the bottom of a greased 9-inch springform pan.
- In a large bowl, beat together 16 oz of Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
- Add in the eggs one at a time, beating on low speed until just combined.
- Mix in the vanilla extract.
- Pour the cheesecake filling over the crust.
- Bake for 40-45 minutes, or until the edges are set but the center still has a slight jiggle to it.
- Remove from the oven and allow to cool to room temperature.
- Refrigerate for at least 2 hours before serving.
- Top with fresh berries and whipped cream before serving.
