Black & White Cheesecake with Pineapple & Kiwi Topping
Ingredients:
- 1 package Black & White cookies
- 4 tablespoons unsalted butter, melted
- 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 4 eggs, room temperature
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup chopped fresh pineapple
- 1/4 cup chopped kiwi
Instructions:
- Preheat oven to 350°F.
- Crush Black & White cookies in a food processor. Add melted butter and pulse until combined.
- Pour mixture into a 9-inch springform pan and press firmly into the bottom.
- Bake for 10 minutes.
- In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese on medium speed until creamy.
- Add sugar and vanilla extract and beat until combined.
- Add eggs, one at a time, mixing after each addition.
- In a separate mixing bowl, whisk together flour and salt. Add to cream cheese mixture and beat until combined.
- Pour mixture into the springform pan and smooth out the top.
- Bake for 45-50 minutes or until the center is almost set.
- Allow to cool completely and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with fresh pineapple and kiwi.
