Say cheese! Meet your new personalized cheesecake recipe:

Black & White Cheesecake with Pineapple & Kiwi Topping

Ingredients:

  • 1 package Black & White cookies
  • 4 tablespoons unsalted butter, melted
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 4 eggs, room temperature
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh pineapple
  • 1/4 cup chopped kiwi

Instructions:

  1. Preheat oven to 350°F.
  2. Crush Black & White cookies in a food processor. Add melted butter and pulse until combined.
  3. Pour mixture into a 9-inch springform pan and press firmly into the bottom.
  4. Bake for 10 minutes.
  5. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese on medium speed until creamy.
  6. Add sugar and vanilla extract and beat until combined.
  7. Add eggs, one at a time, mixing after each addition.
  8. In a separate mixing bowl, whisk together flour and salt. Add to cream cheese mixture and beat until combined.
  9. Pour mixture into the springform pan and smooth out the top.
  10. Bake for 45-50 minutes or until the center is almost set.
  11. Allow to cool completely and refrigerate for at least 4 hours or overnight.
  12. Before serving, garnish with fresh pineapple and kiwi.
