Oatmeal Raisin Vanilla Cheesecake with Whipped Cream Topping
Ingredients:
1 1/2 cups oatmeal raisin cookie crumbs
5 tablespoons unsalted butter, melted
2 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
1 cup heavy whipping cream
Instructions:
Preheat oven to 350°F. In a medium bowl, mix together the oatmeal raisin cookie crumbs and melted butter until well combined. Press the mixture firmly onto the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with an electric mixer until smooth. Add the sugar and vanilla extract, and continue to beat the mixture until it is light and fluffy.
Add the eggs, one at a time, and beat each until just combined. Do not overmix.
Pour the cheesecake filling over the crust and smooth the top with a spatula. Bake for 35-40 minutes, or until the edges of the cheesecake are golden brown and the center is set. Allow the cheesecake to cool to room temperature.
In a separate mixing bowl, beat the heavy whipping cream until it forms stiff peaks. Spread the whipped cream over the top of the cooled cheesecake.
Cover the cheesecake and chill in the refrigerator for at least 2 hours before serving.
