Whiskey Chocolate Cheesecake with Pistachio Crumble Base and Whipped Cream Topping
Ingredients:
- Pistachio Crumble Base:
- 1 1/2 cups of graham cracker crumbs
- 1/2 cup of crushed pistachios
- 1/4 cup of granulated sugar
- 1/2 cup of unsalted butter, melted
- Whiskey and Chocolate Cheesecake Filling:
- 4 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened (32 oz total)
- 1 and 1/4 cups of granulated sugar
- 1/4 cup of all-purpose flour
- 4 large eggs, room temperature
- 1/2 cup of whiskey
- 1/2 cup of heavy whipping cream
- 6 oz of semi-sweet chocolate, chopped and melted
- Whipped Cream Topping:
- 1 cup of heavy whipping cream
- 2 tablespoons of granulated sugar
Directions:
- Preheat the oven to 325°F (163°C).
- Pistachio Crumble Base:
- In a mixing bowl, combine graham cracker crumbs, crushed pistachios, and granulated sugar.
- Add melted butter and mix until the mixture is evenly crumbly.
- Press mixture evenly into the bottom of a 9-inch springform pan using your fingers or the back of a spoon.
- Bake the crust for 10 minutes. Remove from the oven and let it cool completely.
- Whiskey and Chocolate Cheesecake Filling:
- In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add sugar and flour and beat again until creamy and smooth.
- Mix in eggs one at a time, blending well after each addition.
- Add whiskey, heavy whipping cream, and melted chocolate. Mix well.
- Pour the filling over the crust in the prepared pan.
- Bake for 55-60 minutes or until the edges are slightly golden and the center is almost set.
- Turn off the oven and let the cheesecake cool down inside for 30-40 minutes.
- Remove from the oven and let it cool to room temperature for about an hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Whipped Cream Topping:
- In a mixing bowl, whip heavy cream and sugar until soft peaks form.
- Pipe the whipped cream over the chilled cheesecake before serving.
