Whiskey Chocolate Cheesecake with Pistachio Crumble Base and Whipped Cream Topping

Ingredients:

  • Pistachio Crumble Base:
    • 1 1/2 cups of graham cracker crumbs
    • 1/2 cup of crushed pistachios
    • 1/4 cup of granulated sugar
    • 1/2 cup of unsalted butter, melted
  • Whiskey and Chocolate Cheesecake Filling:
    • 4 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened (32 oz total)
    • 1 and 1/4 cups of granulated sugar
    • 1/4 cup of all-purpose flour
    • 4 large eggs, room temperature
    • 1/2 cup of whiskey
    • 1/2 cup of heavy whipping cream
    • 6 oz of semi-sweet chocolate, chopped and melted
  • Whipped Cream Topping:
    • 1 cup of heavy whipping cream
    • 2 tablespoons of granulated sugar

Directions:

  1. Preheat the oven to 325°F (163°C).
  2. Pistachio Crumble Base:
    • In a mixing bowl, combine graham cracker crumbs, crushed pistachios, and granulated sugar.
    • Add melted butter and mix until the mixture is evenly crumbly.
    • Press mixture evenly into the bottom of a 9-inch springform pan using your fingers or the back of a spoon.
    • Bake the crust for 10 minutes. Remove from the oven and let it cool completely.
  3. Whiskey and Chocolate Cheesecake Filling:
    • In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
    • Add sugar and flour and beat again until creamy and smooth.
    • Mix in eggs one at a time, blending well after each addition.
    • Add whiskey, heavy whipping cream, and melted chocolate. Mix well.
    • Pour the filling over the crust in the prepared pan.
    • Bake for 55-60 minutes or until the edges are slightly golden and the center is almost set.
    • Turn off the oven and let the cheesecake cool down inside for 30-40 minutes.
    • Remove from the oven and let it cool to room temperature for about an hour.
    • Chill in the refrigerator for at least 4 hours or overnight.
  4. Whipped Cream Topping:
    • In a mixing bowl, whip heavy cream and sugar until soft peaks form.
    • Pipe the whipped cream over the chilled cheesecake before serving.
  5. Slice and serve the Whiskey Chocolate Cheesecake with Pistachio Crumble Base and Whipped Cream Topping. Enjoy!
