Citrus Dream Cheesecake Recipe

Lemon Bar Base

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tablespoon grated lemon zest

Passion Fruit Filling

  • 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup passion fruit puree
  • 3 large eggs
  • 1/4 cup heavy cream

Berries & Cream Topping

  • 1 cup whipped cream
  • 1/4 cup powdered sugar
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions:

  1. Preheat the oven to 325°F.
  2. In a bowl, mix graham cracker crumbs, melted butter, sugar, lemon juice, and lemon zest until combined.
  3. Press the mixture into the bottom of a greased 9-inch springform pan.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until light and fluffy.
  5. Beat in the passion fruit puree, eggs, and heavy cream until well mixed.
  6. Pour the filling over the prepared crust.
  7. Bake for 45-50 minutes or until the edge of the cheesecake is set and the center is still a bit jiggly.
  8. Remove from the oven and let it cool down to room temperature.
  9. Refrigerate for at least 4 hours until set.
  10. Before serving, prepare the berries and cream topping.
  11. In a bowl, whip the cream and powdered sugar until soft peaks form.
  12. Spoon the whipped cream over the cheesecake and top with mixed berries.
  13. Slice and serve chilled.
