Citrus Dream Cheesecake Recipe
Lemon Bar Base
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/4 cup lemon juice
- 1 tablespoon grated lemon zest
Passion Fruit Filling
- 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 1/4 cup passion fruit puree
- 3 large eggs
- 1/4 cup heavy cream
Berries & Cream Topping
- 1 cup whipped cream
- 1/4 cup powdered sugar
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions:
- Preheat the oven to 325°F.
- In a bowl, mix graham cracker crumbs, melted butter, sugar, lemon juice, and lemon zest until combined.
- Press the mixture into the bottom of a greased 9-inch springform pan.
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until light and fluffy.
- Beat in the passion fruit puree, eggs, and heavy cream until well mixed.
- Pour the filling over the prepared crust.
- Bake for 45-50 minutes or until the edge of the cheesecake is set and the center is still a bit jiggly.
- Remove from the oven and let it cool down to room temperature.
- Refrigerate for at least 4 hours until set.
- Before serving, prepare the berries and cream topping.
- In a bowl, whip the cream and powdered sugar until soft peaks form.
- Spoon the whipped cream over the cheesecake and top with mixed berries.
- Slice and serve chilled.
