Ingredients:

  • 1 1/4 cups apple pie crust
  • 2 tablespoons unsalted butter, melted
  • 2/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 containers Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature (24 oz total)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup ground almonds
  • 1/3 cup apple sauce
  • 1/3 cup almond milk
  • 1/3 teaspoon salt
  • 1/2 cup caramel sauce
  • 1/2 teaspoon sea salt

Instructions:

  1. Preheat oven to 350°F.
  2. Combine the apple pie crust and melted butter together in a bowl. Press the mixture into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes and let it cool.
  4. Combine the sugar, flour, and ground almonds in a bowl.
  5. In a separate bowl, beat the cream cheese with an electric mixer until smooth.
  6. Add eggs one at a time and beat well after each addition.
  7. Stir in vanilla extract, apple sauce, almond milk, and salt.
  8. Add the almond mixture to the cream cheese and mix until well combined.
  9. Pour the filling over the crust.
  10. Bake for 45 minutes to 1 hour or until the center is just set.
  11. Remove the cheesecake from the oven and let it cool for 30 minutes.
  12. Microwave the caramel sauce and sea salt in a bowl for 30 seconds. Drizzle the caramel sauce over the cheesecake.
  13. Refrigerate the cheesecake for at least 4 hours.
