Say cheese! Meet your new personalized cheesecake recipe:

Caramel Macchiato Chia Cheesecake

Ingredients:

  • 1 1/2 cups Chia Seeds
  • 1/4 cup Honey
  • 1 1/4 cups Greek Yogurt
  • 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup Sugar
  • 1 tsp. Vanilla Extract
  • 3 Eggs
  • 1/4 cup Caramel Sauce
  • 1/4 cup Espresso or Strong Coffee

Instructions:

  1. Preheat oven to 350°F. In a mixing bowl, stir together Chia Seeds and honey until combined. Press Chia mixture into the bottom of a 9-inch springform pan.
  2. In a separate mixing bowl, beat cream cheese and sugar until creamy. Mix in Greek yogurt and vanilla extract.
  3. Add eggs one at a time, mixing just until blended. Pour cheesecake mixture over the Chia Seed crust.
  4. Bake for 40-45 minutes or until center is almost set. Allow to cool in the pan for 10 minutes before removing the sides of the springform pan.
  5. In a saucepan, combine caramel sauce and espresso or coffee over low heat. Stir constantly until mixture thickens.
  6. Pour caramel mixture over the top of the cheesecake and allow to cool completely before serving.
