Graham Cracker Crust

  • 7 oz Graham Cracker crumbs
  • 4 oz Unsalted Butter, melted
  • 1 tbsp Granulated Sugar

Strawberry Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1/2 cup Sour Cream
  • 1/2 cup Strawberry Puree (strained)

Whipped Cream Topping

  • 1 cup Heavy Whipping Cream
  • 2 tbsp Powdered Sugar

Instructions:

  1. Preheat oven to 325°F.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well.
  3. Press the mixture into the bottom of a greased 9-inch springform pan.
  4. Bake the crust for 10-12 minutes or until golden brown. Set aside to cool.
  5. In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.
  6. Add sugar and beat again until creamy. Add eggs, one at a time, mixing well after each addition.
  7. Stir in sour cream and strawberry puree.
  8. Pour the mixture over the cooled crust.
  9. Bake the cheesecake for 50-55 minutes or until the center is almost set.
  10. Remove the cheesecake from the oven and let it cool for 10 minutes.
  11. Cover and chill in the refrigerator for at least 2 hours before serving.
  12. In a mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form.
  13. Serve the cheesecake with a dollop of whipped cream topping.
