Wine & Berry Chia Cheesecake

Ingredients:
- 1 cup of chia seeds
- 1 cup of almond flour
- 1/2 cup of melted coconut oil
- 1/4 cup of honey
- 1/2 cup of red wine
- 2 containers (16 oz) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 tsp of vanilla extract
- 1/2 tsp of lemon juice
- 1/2 cup of mixed berries (strawberries, blueberries, raspberries)
- 1 cup of heavy whipping cream
- 2 tbsp of powdered sugar
Instructions:
- Preheat the oven to 350°F. Grease a 9-inch springform pan with coconut oil.
- In a mixing bowl, combine the chia seeds, almond flour, coconut oil, and honey. Mix well and press the mixture evenly onto the bottom of the prepared pan.
- Bake for 10 minutes, then remove from the oven and let cool completely.
- In a separate mixing bowl, beat the cream cheese until smooth. Add the red wine, vanilla extract, and lemon juice. Mix until well combined.
- Add the mixed berries and stir gently.
- Spoon the mixture onto the cooled crust and refrigerate for at least 2 hours to set.
- In a mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
