Ingredients:

  • 1 cup of chia seeds
  • 1 cup of almond flour
  • 1/2 cup of melted coconut oil
  • 1/4 cup of honey
  • 1/2 cup of red wine
  • 2 containers (16 oz) of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of lemon juice
  • 1/2 cup of mixed berries (strawberries, blueberries, raspberries)
  • 1 cup of heavy whipping cream
  • 2 tbsp of powdered sugar

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan with coconut oil.
  2. In a mixing bowl, combine the chia seeds, almond flour, coconut oil, and honey. Mix well and press the mixture evenly onto the bottom of the prepared pan.
  3. Bake for 10 minutes, then remove from the oven and let cool completely.
  4. In a separate mixing bowl, beat the cream cheese until smooth. Add the red wine, vanilla extract, and lemon juice. Mix until well combined.
  5. Add the mixed berries and stir gently.
  6. Spoon the mixture onto the cooled crust and refrigerate for at least 2 hours to set.
  7. In a mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  8. Spread the whipped cream evenly over the top of the cheesecake and serve.
