Bourbon Berry Bliss Cheesecake
Ingredients:
6 oz graham crackers, crushed
4 oz unsalted butter, melted and cooled
3 Tbsp fresh sage, finely chopped
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup granulated sugar
1/4 cup bourbon
4 large eggs
1 cup caramel sauce
1/2 lb fresh berries (any variety)
1 cup heavy cream, whipped
Instructions:
Preheat oven to 350°F. Mix together graham cracker crumbs, melted butter, and sage in a bowl until well-combined. Press mixture into bottom of 9-inch springform pan, and bake for 8-10 minutes until lightly browned. Allow to cool completely while preparing the filling.
In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy. Gradually add sugar and continue to beat until well-incorporated. Add bourbon and stir until evenly distributed. Beat in eggs, one at a time, scraping down sides of bowl as needed.
Pour caramel sauce over cooled crust, spreading evenly. Pour cheesecake mixture over caramel layer, and smooth top with spatula. Bake for 45-50 minutes until center is just set and edges are lightly browned. Remove from oven and let cool to room temperature.
To serve, carefully run a knife around the edge of the pan to loosen the cheesecake. Remove from pan and transfer to a serving plate. Top with fresh berries and whipped cream.
