In a mixing bowl, combine the Vanilla Wafer crumbs, 1/4 cup of sugar, and melted margarine. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and set aside to cool.
In a mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Gradually add 1 cup of sugar, beating until fluffy.
Add the eggs to the cream cheese mixture, one at a time. Beat well after each addition.
Stir in the sour cream, vanilla extract, and salt. Beat until smooth.
Pour the cream cheese mixture on top of the baked crust.
Bake for 50-55 minutes, or until the center is almost set. Remove from oven and let cool completely.
Chill in the refrigerator for at least 2 hours before serving.
Before serving, top with whipped cream, if desired.
