Acai Berry Base

  • 12 oz of graham cracker crumbs
  • 6 oz of melted unsalted butter
  • 2 oz of sugar
  • 1 oz of Acai Berry pulp

Cream Cheese Filling

  • 24 oz of Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1 cup of sugar
  • 4 eggs
  • 1/4 cup of sour cream
  • 1/4 cup of heavy cream
  • 1 Tbsp of vanilla extract

Berries & Cream Topping

  • 1 lb of mixed berries (blueberries, raspberries, strawberries)
  • 1 cup of heavy cream
  • 2 Tbsp of sugar
  • 1 tsp of vanilla extract

Preheat oven to 325°F.

For the Acai Berry Base, combine the graham cracker crumbs, melted butter, sugar, and Acai Berry pulp. Press the mixture firmly onto the bottom of a 9-inch springform pan.

For the Cream Cheese Filling, beat the Norman's Kosher Cholov Yisroel Cream Cheese in a large mixing bowl until creamy. Gradually add the sugar and beat until well combined. Add the eggs one at a time, beating well after each addition. Add the sour cream, heavy cream, and vanilla extract. Beat until just combined. Pour the filling over the Acai Berry base.

Bake for 50-55 minutes or until the center is almost set. Remove from the oven and allow to cool completely.

For the Berries & Cream Topping, whip the heavy cream, sugar, and vanilla extract until soft peaks form. Arrange the mixed berries over the top of the cheesecake and spread the whipped cream over the berries.
