The Mediterranean Delight Cheesecake
Ingredients:
1 1/2 cups of Buttermilk Biscuit crumbs
1/2 cup of unsalted butter, melted
3 tablespoons of honey
16 oz of Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
1/2 cup of granulated sugar
2 teaspoons of vanilla extract
3 large eggs, room temperature
1/2 cup of dried figs, chopped
1 tablespoon of fresh rosemary, finely chopped
1/2 cup of macadamia nuts, chopped
Directions:
Preheat oven to 325°F and grease a 9-inch springform pan.
Mix together the biscuit crumbs, melted butter, and honey until fully combined. Press into the prepared pan and set aside.
In a mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla extract, beating until combined.
Add the eggs one at a time, mixing until fully incorporated before adding the next one.
Stir in the chopped figs and rosemary and pour the mixture over the prepared crust.
Bake for 45-50 minutes or until the edges are lightly golden and the center is just set.
Let the cheesecake cool for 15 minutes, then run a knife around the edges of the pan. Place the cheesecake in the fridge to chill for at least 2 hours.
Toast the chopped macadamia nuts in a pan for a few minutes and sprinkle over the top of the cheesecake before serving.
