Graham Cracker Base


  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

Plain Filling


  • 2 containers (16 oz total) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract

Berries & Cream Topping


  • 1 1/2 cups mixed berries (blueberries, raspberries, and strawberries)
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar


  1. Heat the oven to 325°F.
  2. In a medium-sized bowl, mix together the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until thoroughly combined.
  3. Press the mixture into the bottom and 1 inch up the sides of a 9-inch springform pan.
  4. Bake the crust for 10 minutes, then remove from the oven and set aside to cool.
  5. In a large bowl, beat the cream cheese with an electric mixer until it is light and fluffy.
  6. Add 3/4 cup granulated sugar, eggs, and vanilla extract.
  7. Beat the mixture until smooth.
  8. Pour the filling into the cooled crust.
  9. Bake for 45-50 minutes, or until the center is almost set.
  10. Remove from the oven and cool completely.
  11. In a small saucepan, heat the berries and 1/4 cup granulated sugar over medium heat until the berries have broken down and the mixture has thickened.
  12. Remove from the heat and let cool.
  13. In a medium bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  14. Spread the whipped cream over the cooled cheesecake.
