Banana Nut Rocky Road Cheesecake with Salted Caramel Topping

Ingredients:

  • 1 1/2 cups crushed Vanilla Wafers
  • 1/2 cup chopped Nuts
  • 1/4 cup granulated Sugar
  • 1/2 cup Butter, melted
  • 2 (8oz) containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/4 cup Sour Cream
  • 1/4 cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Mini Marshmallows
  • 1/2 cup Chocolate Chips
  • 1/4 cup chopped Nuts
  • 1 cup Caramel Sauce
  • 1/2 tsp Sea Salt

Directions:

  1. Preheat oven to 350°F.
  2. In a bowl, mix together crushed Vanilla Wafers, chopped Nuts, granulated Sugar, and melted Butter.
  3. Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
  4. In a separate bowl, beat together Norman's Kosher Cholov Yisroel Cream Cheese, Sour Cream, and Brown Sugar until smooth.
  5. Beat in Eggs and Vanilla Extract.
  6. Fold in Mini Marshmallows, Chocolate Chips, and chopped Nuts.
  7. Pour mixture into the cooled crust and bake for 40 minutes.
  8. Allow cheesecake to cool completely before removing from pan.
  9. In a small saucepan, heat Caramel Sauce and Sea Salt until smooth.
  10. Pour Salted Caramel over cheesecake and refrigerate for at least an hour before serving.
