Banana Nut Rocky Road Cheesecake with Salted Caramel Topping
Ingredients:
- 1 1/2 cups crushed Vanilla Wafers
- 1/2 cup chopped Nuts
- 1/4 cup granulated Sugar
- 1/2 cup Butter, melted
- 2 (8oz) containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/4 cup Sour Cream
- 1/4 cup Brown Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- 1 cup Mini Marshmallows
- 1/2 cup Chocolate Chips
- 1/4 cup chopped Nuts
- 1 cup Caramel Sauce
- 1/2 tsp Sea Salt
Directions:
- Preheat oven to 350°F.
- In a bowl, mix together crushed Vanilla Wafers, chopped Nuts, granulated Sugar, and melted Butter.
- Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
- In a separate bowl, beat together Norman's Kosher Cholov Yisroel Cream Cheese, Sour Cream, and Brown Sugar until smooth.
- Beat in Eggs and Vanilla Extract.
- Fold in Mini Marshmallows, Chocolate Chips, and chopped Nuts.
- Pour mixture into the cooled crust and bake for 40 minutes.
- Allow cheesecake to cool completely before removing from pan.
- In a small saucepan, heat Caramel Sauce and Sea Salt until smooth.
- Pour Salted Caramel over cheesecake and refrigerate for at least an hour before serving.
