A Taste of Whiskey Cheesecake Recipe

Ingredients:

  • 1 1/2 cups crushed Black & White cookies
  • 6 tablespoons unsalted butter, melted
  • 2 containers (16 oz) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1/2 cup granulated sugar
  • 2 tablespoons whiskey
  • 1/4 cup semi-sweet chocolate chips, melted
  • 2 large eggs, at room temperature
  • 1/2 cup heavy cream
  • 1/3 cup caramel sauce

Instructions:

  1. Preheat the oven to 325°F. Grease an 8-inch springform pan with non-stick cooking spray.
  2. Mix the crushed Black & White cookies and melted butter in a medium bowl. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove and cool completely.
  3. In a large bowl, beat the cream cheese and sugar with an electric mixer until creamy and smooth. Beat in the whiskey and melted chocolate, then beat in the eggs one at a time until just combined. Do not overmix.
  4. Gradually beat in the heavy cream until smooth.
  5. Pour the cheesecake batter over the cooled crust. Bake for 50-60 minutes or until the center is almost set and the edges are lightly golden brown.
  6. Remove the cheesecake from the oven and cool for 10 minutes. Run a knife around the edges to loosen the cheesecake from the pan and cool for at least 1 hour at room temperature. Refrigerate for at least 2 hours or until completely chilled.
  7. Before serving, drizzle caramel sauce over the top of the cheesecake. Slice and serve.
